It’s all about the Food in Italy!
Pizza Restaurant Owner Giacomo Guido is super-passionate about food – as you would expect! His restaurant on Watergate Street is his second venue, and has become a firm favourite over the last few years as he ventured out into the city from his humble beginning in Chester Market.
Giacomo is from the stunning island of Ischia, Naples Bay in the region of Campania, which is well known for fruit and vegetable production, including 1.5 million tonnes of tomatoes a year! As he says, food is everything in Italy and he recalls fond memories of his mum making her legendary Ragu from 8am ready to eat at 1pm. ‘She is the Best Chef I ever met’ he says.
Campania is a very special place due to it’s unique microclimate, where the combination of the volcanic soils of Vesuvius and the winds from the sea make their products – like San Marzano tomatoes, Buffalo mozzarella, Gragnano pasta and Wines – totally unique. Much of his produce is sourced from the region too keeping his menu super-authentic; Buffalo mozzarella, tomatoes, anchovies from Cetara (Amalfi coast) and wines all come from the Campania region and some of them directly from Ischia itself. Nduja from the Calabria region and Burrata from Pulia. As far as local produce goes – Giacomo’s 4maggi uses a selection of the best Cheshire cheeses.
In terms of food inspiration, Pizza Chefs Franco Pepe and Francesco Martucci run the best pizzerias in the world, and Giacomo counts both of them as friends.
Giacomo lives and breathes great pizza – something that shines through every day in his fabulous restaurant. When I asked him about his own favourite dish, of course he answered Pizza! and also the famous fresh fish dishes from his beloved Ischia. His favourite ingredients include truffle, tomato, mozzarella, Parma ham, basil, and Parmesan. He recommends a sparkling red Gragnano wine to perfectly complement his classic Margarita pizza as well as Amatriciana – with piennolo tomatoes from Vesuvius, pecorino cheese, guanciale (pork cheek) and chilli oil.
